Day 16: Sharing is Caring: Delicious and Nutritious Turkey Spaghetti

Well anyway.....today was a good day.  Feeling a lot better today so I went ahead and did my fit test.  I decided to not over do it and go ahead and just start today what I was supposed to be doing yesterday.  So I AM EXTRA EXCITED because I increased my numbers today with my fit test.  Two weeks ago with INSANITY I had to take a fit test and take down my numbers of how many reps of each exercise I did.  In every category I increased my numbers so that was a great accomplishment and great motivation!!!


TODAYS MENU:


Breakfast: Oatmeal and two pieces of turkey bacon
Snack: Greek Yogurt and Fresh Blackberries
Lunch: Salad with romaine, almonds, avocado and balsamic vinagerette, V8 and a peach
Snack: Veggies and hummus
Dinner: Turkey spaghetti and a romaine salad with fat free feta cheese, pumpkin seeds, almonds and tomatoes drizzled in balsamic vinagrette.  And did I mention the dressing is only 15 calories for 2 tablespoons and really tastes good!!!


Dessert: Sugar Free Cherry Jello with a dollop of light whipped cream!


THE MEAL


I really enjoyed my dinner today and thought I would share it with you!  It was healthy, incorporated lots of fresh veggies, lean protein and complex carbs with whole wheat thin spaghetti.  Just watch your portions and you will be having a great, healthy meal!!!!


Ingredients:

  • 1 lb ground turkey
  • Half of a zucchini, sliced
  • 5 garlic cloves, minced
  • Mushrooms, 5, sliced
  • Newman's Own Fire Roasted Tomato and Garlic
  • Green bell pepper, half, chopped
  • Red onion, half, chopped 
  • Olive Oil
  • Sea salt and pepper, to taste
Salad: Romaine lettuce, fat free Feta cheese, almonds, tomato, Balsamic Vinaigrette, pumpkin seeds (optional)





Directions: Place turkey in a pan and begin to cook on medium heat. Get a pot out and boil water for the spaghetti.  Get out your mushrooms, zucchini, garlic, bell pepper and onion.  Chop everything and saute in a tsp of olive oil on medium heat until cooked through.

Natural and delicious
 Add the spaghetti to the pot of hot boiling water while the sauce simmers with the meat and veggies on low.
The spaghetti! Whole grain!
While your spaghetti boils until it is al dente (read box for cooking time).  You can chop your romaine lettuce and tomato and get it prepared on your dinner plate or bowl.  Add a few crumbles of Feta cheese on top with about a tablespoon of almonds and pumpkin seeds.  Add 2 Tablespoons of dressing on top of the salad.  Set to the side.




When the spaghetti is done, rinse it under cool water in a drainer.  Plate a small portion of noodles on your plate and add the sauce.  Dinner complete!  Enjoy!

  3. I am tempted by hot, greasy, cheesy pepperoni pizza! It is my weakness. Right along with Key Lime pie.:) Oh the soul of my inner fat kid! --BFF

  4. Aww friend! Man I have an inner fat girl I am repressing too especially when it comes to PIZZA (extra extra cheesy), french bread and cheese!!!! Oh, and champagne!!!
